    If one maintains a pleasant expression — and a good attitude — when trying new things, the success rate is much higher. Natto is good stuff, and I have enjoyed sea urchin sushi and spaghetti. In the right establishment, I am wiling to give the raw chicken a try.

    As someone mentioned, beef tongue is not rare in the US, but I must say that served in Sendai is especially fine.

    Cow tongue is actually common in the US. I see it a lot when I go out to eat tacos as an option for meat.
